This one is quick, easy and delicious! Romain made this for me on Valentines Day as an appetizer and it was a DELIGHT. I think the key here is the mint, lemon zest and topping of flake salt. It’s also using really quality ingredients, keeping them simple and letting them shine. If you’re thinking of skipping the mint – don’t! It’s the star of the dish. It looks fancy and tastes even better!
You’ll need:
Prosciutto – thinly sliced
Peas – we use frozen, cooked in a little water for about 10 minutes
Fresh Mozzarella – we like to use the mozzarella medallions or balls
Top with: good olive oil, mint, lemon zest, pepper and flake salt
