Foodie Friday: Quarantine Eats

I decided to make this blog post more for myself, so I could look back and remember the only shining light in the quarantine world of 2020: food. These are all iPhone photos, but you know, that’s just real life! I’ve noticed that we love: our cast iron, salmon, crispy chicken thighs and feta.

Spring Veggie Pasta

Sunday Chicken

Steak! Cooked in a cast iron, which is the best way to cook steak

Our “fancy” date night in! Warm brussel sprout salad with pancetta and meatballs in gravy with grits!

Pizza Night!

This Pinterest fail, lol!

Salmon & Risotto

Coq Au Vin Inspired Dinner

When we discovered the BEST cookie recipe ever by Top Chef winner Kelsey! AND she liked it on IG and told me they looked perfect!

Carnitas, always a favorite!

The same cookies, but double chocolate this time. And no, this wasn’t the end of these cookies.

The most delicious smash burgers in the cast iron

Roasted chicken with white bean puree

Barley & Chorizo Stew

Cauliflower Tacos with crispy shallots and homemade corn tortillas

Butter Shrimp Rolls

Spaghetti, simply delicious

Our 2 year anniversary dinner! We ordered oysters and a crack pie from Milk Bar!

Chicken & Leek Parcels

Crispy Chicken Thighs & Roasted Brussel Sprouts

Roasted Beet Chips

Homemade Nutter Butter Cookies

PIGS IN A BLANKET

Our not so good chocolate souffles, but good tequila drink

Homemade falafels!

Mint Juleps

Eggplant Parm – seriously one of my favorites!

This delicious cocktail (this was around the time of the Zoom happy hour phase)

These stuffed zucchini boats – I really love pine nuts!

When we discovered how to make these really delicious oven fries that are crispy on the outside and soft on the inside. (the trick is to boil them for a few minutes first)

This amazing baked rice with tomato confit

Homemade nilla wafters and banana pudding (seriously the best summer dessert)

MEATBALLS

Teriyaki Salmon Bowls

Our veggie feast night! Whole roasted cauliflower, charred tomato confit on top of chilled yogurt and whole carrots with creme fraiche

Eggplant & Lentil Stew

Veggie Dumplings

Spinach, Leeks, Eggs & Feta

These crispy potatoes

Grits with all these veggies on top

Romain’s birthday feast! I made spread of tinned fish and goodies and we order oysters again (who’s surprised)

Pancakes (is there anything more comforting in the morning?)

Krispy Kreme Donut Bread Pudding, yes you heard that right. We had glazed donuts that were going to go stale so naturally, I made them even more healthy by making them into bread pudding.

All this produce…do we really eat this much food?

Fancy Fish Sticks

Fried Green Tomatoes

Crispy Chicken Thighs with Tomato Rice

I made all these melon balls and yes it took forever

Butter Parsley Salmon (we really love salmon)

Cast Iron Pork Chops with Fennel & Onions and Mashed Potatoes

Lima Beans, Green Onions, Sumac & Feta with a Fried Egg

Shrimp & Veggie Tempura Night!

Schnitzel Night

Sticky Ginger Chicken Meatballs

Lobster Night! We order them from Island Creek Oysters (the same place we got our oysters from) and they came live via Fedex! We had just lobster and butter the first night and then we had lobster pot pie the second night!

Soft Pretzels!

At least we’ve had some good eats!!
