We just got our new blender and so of course we had to figure out something exciting to make for our first time using it! What a great excuse to make a milkshake (as if this heat wasn’t enough of an excuse). We might need to make a milkshakes into their own blog mini series because we had a hard time trying to decide what flavor milkshake to make. I’ve always had such a love for strawberry ice cream and cupcakes and since they were in season, it just seemed like the perfect choice.
We took a strawberry milkshake a step further by adding a strawberry sauce and topping it with shortbread, just like a strawberry shortcake! We bought some pistachio shortbread cookies from the store, but you can make your own if you feel so inclined because I’m sure that would make it extra amazing. Whipped cream would also be a welcomed addition.
This recipes makes 2 smaller milkshakes or 1 large milkshake if you like a challenge.
Strawberry Sauce
Strawberries, a pound
Sugar, about 2 tbsp
Strawberry Jam, about 2 tbsp
Lemon juice, a big squeeze
Cut the strawberries, mix in the sugar and let them sit for about 30 minutes, to macerate (let the juices out). Add to a saucepan with the strawberry jam, mash strawberries and cook until thick, about 20 minutes over medium high heat. Add lemon juice and toss in the fridge for a bit to thicken – the longer the better, but who has time for that? We waited about 20 minutes.
Use this extra time to play with your doggo, who will be busy worrying about whether or not they are going to get some strawberry milkshake.
Milkshake
Strawberry Sauce (reserve a little to add on top)
Vanilla ice cream, a pint
Milk, 1/4 cup
Vanilla, 1 tsp
Add everything to a blender and blend until combined!
Top with the rest of the strawberry sauce and crumbles of the shortbread cookies and enjoy!
