Foodie Friday: Citrus Salmon

We eat a lot of salmon in this house. The frozen salmon from Whole Foods is our go-to weeknight dinner of choice. Sometimes we treat ourselves to a nice big salmon fillet, which Romain roasts in the oven and it’s simple and delicious. This time we paired it with some beautiful, winter citrus, because I’ve honestly been looking for a way to incorporate it into a recipe for Foodie Friday. It looked beautiful and tasted delicious!

We just put a good amount of olive oil, salt and pepper on the salmon, topped with with sliced citrus, onion, garlic and herbs and baked at 350 for around 12-15 minutes (depending on the size of the fillet). We like our’s more towards medium. Another great way to prepare it is to add some soy sauce and green onion. I love it!

Romain likes to whip up a quick and easy yogurt dill sauce when he makes fish. Finley chop several sprigs if parsley and dill and about a teaspoon of capers together, add the juice of half a lemon and a clove of minced garlic. Mix all of that into about 3/4 cups of full fat plain yogurt and add salt, pepper and olive oil to taste and enjoy!
